There are several possibilities for explaining star light. First, remember that the further away they are, the less accurate the estimated measures are. The distances are derived through parallax trigonometry. They use the earth and moon as points and measure the angle from each to the star. In distant stars, the angular difference is too small to accurately measure. The answer could be one, or a combination of these.
Adam was created as an adult, not an infant. The trees were already bearing fruit (or Adam and Eve would've starved waiting for a tree to grow). 1 John 1:5 This then is the message which we have heard of him, and declare unto you, that GOD IS LIGHT, and in him is no darkness at all. God IS Light. That doesn't mean all light is God, but that light has always existed. God could've created the stars, put them way out there on the other end of the light that has always been here. Light, per se, was not created, it is part of God and has always existed from infinity. 2 Cor 4:6 For God, who COMMENDED the light to shine out of darkness, hath shined in our hearts, to give the light of the knowledge of the glory of God in the face of Jesus Christ. [It doesn't say here that He created light, it was already there.] Isa 45:7 I FORM the light, and create darkness: I make peace, and create evil: I the LORD do all these things. [He created darkness, but the light was already there]. I could say "let there be light", and turn on the switch. But that doesn't mean I created it. There are lots of things about light we don't know. If you turned off the light in a sealed room, where does it go? Shouldn't it still be there? If you are driving at the speed of light and turned on your headlights, what would happen? How about if you turned on your tail lights?
They postulate a concept called "Reimannian Space", which allows light to take a "shortcut". Scientists have long thought that space was not "empty", but it consists of something we are unable to detect. Their mathematical equations which work, have to make this assumption. Scientists used to call this unobservable substance, "ether". The Bible speaks of "paths" of light, Job 24:13 They are of those that rebel against the light; they know not the ways thereof, nor abide in the paths thereof.
It's been proposed by Barry Setterfield and others that light could've traveled faster in the past. Setterfield did experiments that indicated that light is slower today than before, but the results only varied within the margin of error, so they don't prove it. However, light cannot escape a black hole, so we know that it's ability to travel CAN be hindered.
4. GRAVITATIONAL TIME DILATION
This is a detailed scientific theory presented by physicist Dr. Russell Humphreys. It acknowledges that time is relative to gravity, and derives from Einstein's General Theory of Relativity (NOT Einstein's Special theory which deals with time being relative to the SPEED of light, and has difficulties). Atomic clocks and other experiments have shown that gravity affects the passage of time. Clocks, and everything else, move slower under heavier gravity. This would allow one day to pass on earth, while a much longer period of time passed in deep space. Humphreys' book "Starlight and Time" details the theory and gives the specialized mathematical formulas. It is thoroughly scriptural and scientific. The plain verses that say "the evening and the morning were the nth day", as well as the fact that the sun was created AFTER the plants, show that creation was done in six normal days from earth's vantage point. Had the days been not literal 24 hour days, the plants would've died without sun before long. John 5:46-47 For had ye believed Moses, ye would have believed me: for he wrote of me. But if ye believe not his writings, how shall ye believe my words? If you can't believe the Genesis record, you don't believe the Lord. You are calling Jesus Christ a liar.
